Pecan, Almond, and Walnut Coconut-Maple Granola

The only issue with cooking something really delicious is that it can be near impossible to stop “tasting” that really delicious creation.

This granola was impossible to stop munching on.

I have been switching back and forth between eating plain greek yogurt mixed with granola in the morning and my usual oatmeal. I wanted to make my granola a bit more exciting by making it homemade!

This granola is decadent, healthy, filling, sweet, salty, crunchy, SO good. Just be sure to portion it out or you will end up eating half the batch in one sitting like me…ooops.

I adapted this recipe from a good friend of mine’s mom and it is a tried and true granola recipe. It is AMAZING! And super easy.

Pecan, Almond, and Walnut Coconut-Maple Granola


1 large egg white

3 cups old fashioned oats

1/2 cup chopped pecans

1/2 cup sliced almonds

1/2 cup chopped walnuts

1 1/2 cups sweetened coconut flakes

1/2 cup maple syrup

1/4 cup warmed coconut oil

1/4 cup golden flax meal

2 tbsp light brown sugar

1 1/2 tsp kosher salt

1/2 tsp ground cinnamon

Preheat oven to 300.

Toss all ingredients together in large mixing bowl. Spread evenly onto baking sheet with rimmed edges. Bake for 40 minutes, removing pan to stir every 10 minutes. Let cool on baking sheet (granola will crisp up as it cools). Store in airtight container for several weeks, or can be stored in freezer until ready to use for several months.
