Pumpkin Pie Oatmeal

We all know about my obsession with peanut butter and oatmeal. My friend Jennifer told me she loves adding pumpkin to her oatmeal and since we all know about my obsession with that too, I was so excited to try it out.

This oatmeal is PUMPKIN PIE in a bowl! And it’s healthy! And filling (pumpkin has a TON of fiber)! And easy! OMG count me in!!

Pumpkin Pie Oatmeal

Makes 1 serving

Ingredients for Option #1

1/2 cup old fashioned oats

1/2 cup canned pumpkin (not pumpkin pie filling)

3/4 cup water

1-2 tbsp light brown sugar

sprinkle pumpkin pie spice, to taste

Ingredients for Option #2-this version is my favorite!

1/2 cup old fashioned oats

1/2 cup canned pumpkin (not pumpkin pie filling)

dash of vanilla extract

3/4 cup water

2 tbsp maple syrup

sprinkle pumpkin pie spice, to taste

In a large microwaveable bowl, combine oats, pumpkin, vanilla, and water, Stir together. Microwave for 3 minutes. Mix in other ingredients to taste.
